La Maison Le Chevreuil, located in the village of Meursault, the wine village of Burgonya de Beaune, opened its doors in September 2026. The ten-room hotel, which was launched by four wine enthusiasts from Denmark, Switzerland, Germany and Norway, was passed through a two-year restoration process with the signature of Johanna Leserre, founder of the architect Aubin Prost and Beaune-based Slowhome studio.
The furniture produced with local craftsmen is combined with round lines inspired by wine barrels and cellars of the region; curved oak lobby is complemented with dark wood and wine shades, deep bordo bath surfaces. While staying at GrandCœur Paris’s former chef Alfredo Martin, the contemporary Burgonya cuisine is amazed in the TERRE restaurant.
Burgonya is mainly but the wine cellar, which is opened outside the region, accompanied by sommelier, offers meetings with taste and producers. This opening for the hotel is the expression of a measurable accommodation that is quietly jointed into the everyday rhythm of a wine village.
