The Michelin Guide has turned a new page on America’s gourmet map: Colorado has been evaluated with a statewide selection for the very first time. Spanning from the mountains to main streets, this comprehensive list features 63 restaurants representing 22 distinct culinary cultures. As Gwendal Poullennec, International Director of the Michelin Guides, pointed out, Colorado’s culinary scene has undergone a profound transformation since its modest beginnings in 2023.
The most striking name of this selection was Milpero in Denver, bearing the signature of Chef Johnny Curiel; the restaurant stood out as the state’s sole newly starred address this year. Curiel’s contemporary interpretation of Mexican cuisine blends tradition with innovation: a beet-toned mole rosa accompanying bluefin tuna flautas, mole amarillo meeting American wagyu beef, and hot champurrado poured over an atole mousse served in the form of a corn cob rank among the menu’s signature moments.
Milpero’s story demonstrates that luxury gastronomy is no longer sought solely under the bright lights of major cities, but also in quietly deepening local cuisines.
