In the Fishtown/Olde Kensington region of Philadelphia, the main dream of the award-winning Emmett, chefs Evan Snyder and Julian van der Tak find this autumn life: Jean. A converted living room was deliberately kept in small — only in the middle of the hall, which is located 15 people, it rises a seven-feet high quarry.
From the southern coast of North Africa and the Mediterranean, especially from Morocco, the menu of tasting inspired by a completely fire-based cooking. The color palette of the mosque is expected from the Moroccan architecture and the 20th century post-empreitionist picture; special production ceramics are made from the hands of Lauren Rider and Megan Stover, while glassware comes from the city’s own workshop Remark Glass.
Jean for Snyder and van der Tak, the main concept that they carry in their minds before opening Emmett — the idea of a table at home temperature more mahrem. This approach to the center of the sincerity of an invitation, not a restaurant food, is nominated to be one of the most quiet but most ambitious among the autumn openings of Philadelphia.
