Massimiliano, founder of Sestogusto from Turin’s reputable bakers The restaurant on the Chao Phraya River coast of Four Seasons Hotel Bangkok, between 18-30 September, is welcomed as a guest chef at Riva del Fiume. Prete, which defines itself as a “lievitista”, meaning yeast dough specialist, recognizes traditional Naples pizza culture with a approach that brings together with pastry precision and fermentation research.
In September 18-19, the Prete, who came to the kitchen in lunch and evening services, introduces the “SopraSotto” pizza, which developed together with the Executive Chef Andrea Accordi; culatello fiocco, onion jami, Pecorino Fondatore, Girolle mushroom and Senise pepper, this recipe is left in the menu until the end of the month. Vezüv cherry tomatoes and buvel mozzarella prepared with “La Bufala” and the “Sant’Ilario” is among other signatures of the private menu.
Riva del Fiume, which has two cutlery awards in the Italy Restaurants Guide of Gambero Rosso, enriches the tradition of pişen Napoli pizza in hand-made pasta and wood fire with this collaboration. With its own definition of Prete, “pizza is a living expression of craftiness” — Bangkok’s river coast, a quiet yet meticulous stage is installed.
